I'll give you full marks for the level of thought put into this. I believe that Itachi's condition is simillar to a body rejecting a foreign parasite. This could be similar to the same condition that affects Jinchuriki that don't integrate well or a Jinchuriki that looses their Bijuu. Interestingly enough once Naruto has integrated with the tailed beasts this foreign agent seems to have to been exorcised from the tailed beasts, and the Jinchuriki appear capable of surviving.

This has been posted dozens of times already. I think its just something Itachi fans put together to help them cope with why he died when he was really just killed by his superior little brother. They can't accept that so they find reasons like this and try to apply real world medical diagnosis to him to convince themselves their solo king didn't get solo'd. Hashirama fans do the same thing, they say he died from cancer because they just cant cope that their God of Shinobi lost against someone in the First War, so he was in fact solo'd.

There's something wrong with your brain. Go see a psychologist please.
