As i do this i control the caramel around you to shoot up around you and your summon binding you in place using:

Shooting the caramel up from behind you binding you and your summon so you are not able to move. Seeing as you said you were on his back, if your summon shot quills upwards they would of stabbed you too, so by going up i'm avoiding them, and if not i'll hit them away with my wings. I perform one additional handseal heating up the caramel burning you and your summon to death.
My problem with your move was you never got out of the carbon monoxide as you'd still be choking. Not only that, but by summoning your beast under you, it would push you up so that you would smash into the roof of my barrier knocking yourself out.
