Yes he can. Totsuka needs to pierce an object to seal it, sand is thin enough to make it nearly impossible for the totsuka to cut it cleanly, in addition to all the sand that would be remaining after cutting 10 sand grains. Anyways, once he's under the sand, he doesn't have the physical capabilities to move his sword precisely, quickly, or powerfully.

Itachi can
1 seal the sand
2 burn the sand with amaterasu
3 one-shot Gaara with amaterasu before he could sink anything
4 one-shot Gaara with Tsukuyomi before he could sink anything
5 use a crow clone

Sand dooesn't burn from Amateratsu as shown in the gaara vs Sasuke fight.

Again, Amateratsu was blocked as seen in the last page, and amatertsu couldn't burn through either.
Irrelevant to the thread, thus disregarded (Although if gaara is in use of the third eye, tsukoyomi is useless against him).

Irrelevant, but same as the last point, second eye>genjutsu.

Itachi fans make it extremely difficult to have a discussion with about fights against Itachi lol. I don't see anybody with the ability to defend agains Gaaras sand, except Madara. But Itachi could separate himself from the sosanoo like he did against Nagato. With Itachi and his sosanoo moving and attacking from different directions, Gaara would have a hard time sinking either one. But idk... I hope this helped at all

Yeah thanks. I didn't realise he could separate himself from Susanoo.

Considering Kimimaro was able to get out of there. Its illogical to say a Susanoo that is physically stronger than Kimimaro in every way can't escape.

Yasaka Magatama will effortlessly rip through Gaara's sand and kill him.

Or if he can see Gaara, Amaterasu would do the trick. Either way Gaara can't sink Itachi unless Itachi lets him do it.
