Who do you think would win in this fight? I think Shikamaru would.

Gotta go with Shikas. Mid range means he won't get blitzed from the start, and from there he can start to formulate a strategy seeing how he has full intel on the Byakugan (wich is an incredibly dangerous weapon on someone with a mind like Shikamaru). Since Hinata have the Byakugan traps will be more difficult to land, so mid high diff for him.

Well Hinata is on a tracking ninja team. Include the Byakugan's abilities, there is no place for Shika to hide to formulate a strategy. Shika lacks offensive jutsus but makes up for it with his tactical mind. Hinata is a cqc - mid range fighter. Shika's only hope is to trap Hinata and go in for the kill like he did Hidan. But Hinata would see them avoid them.

Toss up and depends on who can corner who first. One blow from Hinata and it's over for Shika.

Shikamaru, low-diff.

I wouldn't say low diff. As stated by Lariatoo, Hinata has the Byakugan which makes it much harder if even possible for Shikamaru to hide and formulate a plan. He needs a window of opportunity to set up a trap or something, to get the edge.

One of the smartest characters in the entire manga that is fairly capable of taking on Jounin-level opponents, against someone who has zero intelligence feats and definitely can't overpower wits with sheer might?

I wonder how that will go...

Shikamaru has nothing that could beat Hinata.

All of Shikamaru’s jutsus require for the shadow to be attached to the opponent, and in such a case, Hinata could just channel chakra through it to either destroy it or send chakra directly to Shikamaru’s organs, crippling him and weakening his attack power and speed.
Of course, That’s assuming he’d be able to catch her before he would get blitz’d by an Air Palm.

That’s also assuming he would be given the time to activate such techniques, because as long as Hinata stays on sHikamaru’s tail, he will never be given the chance to activate and properly use any of his techniques. This is shown when Temari was waiting for Shikamaru to come out of from behind the trees, thus giving him a chance to activate it, when SHikmaru hid from Tayuya to devise a plan, and when he had to spend time in Konoha to devise a plan to kill Hidan.

His abilities are also simple to avoid in one on one, and this is shown when Kin was easily avoiding his Shadow with ease.

How does Shikamaru win? Toe to Toe goes to Hinata. Also Hinata can hit him mid-range with air palm. The only shot Shika has is to trap/ensnare Hinata like he did Hidan, but Hinata will see any traps he lays and avoid them. Not to mention the shadow possession, shadow stitching jutsu consume a lot of chakra and get weaker everytime he uses it. Temari, Tayuya, and Hidan have all noted this. Without having offensive jutsu, Shika is forced to wait for an opportunity for his opponent to screw up and then enact a plan.

Using shadow stitching to get to the blind spot would never work in a million years. Because not only is Hinata able to simply move her head to cover up for that, she can also still see Shikamaru and the Shadow to a certain degree even if some of it is within her blind spot, as not all the shadow and certainly not Shikamaru will be within the blind spot, and for such a thing as you mentioned to work, it would mean Hinata would be stupid enough to let Shikamaru end up behind her. If she's able to keep track of him constantly [which Neji failed to do w/ Kidomaru], which she would be able to do due to her 20KM radius vision, he'd never be able to take advantage of the blind spot. Plus, for the sake of argument, if Shikamaru and his shadows both somehow manage to fit into the blind spot [which would be impossible], Hinata, w/ her radius of 20KM, would be able to notice she's lost track of them, and promptly turn her head. I mean, really, it isn't that hard to do.

He can formulate a plan in moments. He knows how she fights. More importantly, Shika can survive on his own. Hinata has a chance to win, but I think Shika can take it

Knowing how someone fights doesn't mean you'l be able to counter it necessarily.

How would he do that? Seriously, all anyone who's defending Shikamaru can come up w/ is "he'll come up w/ a plan". What plan? What stragety? How would he exploit any of Hinata's abilities?
