He used his strongest techs so that Sasuke would be introduced to them and understand their power to control them later on. You said it yourself that he planned the whole battle and that was part of his plan. And just because he use his strongest techs doesn't mean he was doing his best. Half of the battle was Itachi talking and talking about the Uchiha past and powers and what you have to do to obtain them. Don't be ignorant.
