The demon of the Fruit had possessed people in the past.

Kaguya became evil upon eating the fruit, which contained a demon rabbit.

Not only did Kaguya get infused with the demon's evil, it got passed on as well.

Kaguya had two children, Hagoromo and Hamura.

I suspect that the evil was passed down to Hamura. Even though Hamura helped saved the world, he was evil.

The Rabbit Demon made Kaguya evil and it makes sense that the plan doesn't end with Kaguya.

It must have passed to one of her children. All according to plan.

Hagoromo was shown with the Yang seal

Which meant that Hamura had the Yin seal. Yin is the dark part of chakra so it was likely that the evil part is Hamura.

Hagoromo had to kill Hamura at one point to stop him. He took the Yin seal.

When he fathered children,

Indra had Yin power and Ashura had Yang power.

But it could very well be that Hamura's evil was lying dormant in Hagoromo via the Yin seal and finally passed into Indra where it started festering.

Sasuke is the last line of Indra.

It makes sense. No matter what Hagoromo did, nothing worked. Nothing can break the control.

Perhaps the Demon of the Fruit's ultimate pawn isn't Kaguya. But it's Sasuke.

Sasuke had already demonstrated powers that even impressed Hagoromo. (e.g Hagoromo impressed at Sasuke's genjutsu)

He is the final piece of the puzzle that the Demon of the Fruit needs for total control of the universe.

+1.

But taking in mind the outcome of the past (every time the elder brother try to do the coup d'etat) he fails, thus repeating the cycle of hatred.

The only way for the cycle of hatred to end would be Sasuke having something else in mind (ergo, not trying to control the world with power, but erasing power from the earth).

Yin and Yang don't necessarily represent good and evil.

Their's not demon in the fruit, because the fruit appears every 1000 years, so where is the demon in the mean time. Also why would this demon need a pawn at all? Kaguya also didn't become evil until some time after eating the fruit, when Hagoromo started teaching people how to use chakra, and she began to lose more of her power. Finally, Indra and Ashura where born before Kaguya was sealed, since she knew who they were and recognized their chakra in Naruto and Sasuke.

Why would Kaguya suddenly turn so evil? Why is there an unbreakable curse on Indra?

Yes, there could be a demon. It could just be a spirit that needs living things to channel power.

In the Manga, it was indicated that Hagoromo had children after defeating the Juubi(aka Kaguya). We have to assume that Kaguya was sealed first.

Now being sealed doesn't mean she doesn't keep an eye on things.

Now either that or here is another possiblilty

Evil was alway there in Hagoromo was well as Hamura. But the evil from Hagoromo was dormant hence Hagoromo didn't become actully evil.

The evil resurfaced inside Indra from Hagoromo.

Or the fact that power corrupts.

Who said it was a sudden change? Most likely it happened over time as she found her power and control slipping away, and she took more and more extreme measures to exert her control. Eventually she became completely obsessed with it. As Mr Hiru alluded to, absolute power corrupts absolutely.

So what does this demon do for 999 years when there is no fruit? Where does it go? Why doesn't it just use Shinju to channel its power? How come this concept of demons has never existed in the NV thus far? This is the only actual demon in existence?

Where was this stated? I'm going to need a scan. Also you're going to have to explain how Kaguya knew about her grandchildren.

How is she able to see things when she's sealed? Far as I know, no other character has been able to pull this off.

Evil is an abstract concept, all people have the capacity for evil in them, it's not a trait or power than can be passed on to your children. There's no evidence that evil works any differently from our world and this manga's world.
