itachi couldve killed him multiple times for ex...when they had that fire battle he showed amaterasu but when it was about to hit him itachi made amataerasu disappear

Then why didn't Itachi let Sasuke experience all three days? Then when it ends continue to fight to exhaust Sasuke's chakra. Even if Itachi let Sasuke break out would still take considerable skill to break out, skill the vast majority of ninjas lacked.
