Yeah, that applies to a lot of anime unfortunately, it's OVA's are better done than the show itself, unfortunately. Vergo's CoA is deadly compared to Sanji's, that's why it was a big issue for someone like Smoker. It's a different scenario, Crocodile will last a longer with Sanji than Smoker did with Vergo.Also, are people forgetting what happened with Vergo and Smoker? The more smoke Smoker had, the larger the target Vergo had to be able to strike. The second Crocodile bonds his body and consciousness with the desert, Sanji can literally stomp the ground and make Crocodile pass out due to the connection.

Yes, no one attack from Sanji is stronger than one Brilliant Punk from Jozu. But multiple, successive attacks from Sanji will do more damage than one Brilliant Punk. While Crocodile is capable of tanking one Brilliant Punk, a few more would have most likely killed him. If Sanji hits Crocodile enough times, he will knock out Crocodile, the number of hits Sanji needs is just far more than the number of hits Jozu needs.Crocodile wins

The under ration of Crocodile is ridiculous, Crocodile did well clashing with Doflamingo's kick too.

All it takes is one kick from Sanji, and he can follow up with a barrage like Poele a Frire: Spectre. Yes, Sanji is going to stomp a whole desert and miraculously hit Crocodile somehow.Crocodile flying means nothing as Sanji is faster in the air anyways. He goes underground and becomes one with the desert, Sanji can literally just stomp the ground and Crocodile will pass out.
Its not hard to grasp. If you have superior speed than someone, you can strike them. Because the strength gap between Sanji and Crocodile is large, and Sanji is immensely faster than Crocodile, a direct hit to the face would daze him and send him flying. During that moment he's dazed and flying, he's vulnerable. Sanji can follow up with more kicks, which Crocodile would be unable to block against. With Gear 2, Luffy could have Jet Pistoled Crocodile and he wouldn't have been able to do anything about it. Crocodile was unable to dodge some of Alabasta, pre-Gear Luffy's attacks, how's he gonna dodge or move to block someone who is immensely faster than that? It's not that Crocodile is letting Sanji hit him, Crocodile just doesn't have the speed to do anything about it.Oh so he's going to feel it....

Nothing is keeping off guard in a one on one fight, in the marineford it was a free for all.
