Sakura has probably improved since that fight and she knows almost everything about sasori's attack pattern and style of fighting. He also showed her his last and final puppet himself that is. and the 3rd kazekage. She is also a very skillful ''dodger'' and can evade attacks effectively. However she has to kill him before her antidotes run out otherwise her body might go numb so its difficult anyway. But she can win if she fights well I think
