You said it wrong when you said that sage mode Jiraiya will dodge Amaterasu via Chakra sensing, he has no such ability,and even if he can, like Naruto it will need him to focus on particular Chakra to actually sense it, and in a battle with a ms user it will not go well, But as i stated in my early post that he does not need to sense Chakra in order to avoid Amaterasu, Since sage mode grants him tremendous speed, more then enough to dodge Amaterasu.

Anyway i cannot be bothered to check the databook but im certain imperfect sages cannot use katas nor do they have sensoring abilities, afterall jiraiya hasnt shown neither in the manga so why give him these abilities. But lets assume an imperfect sage can sense it, jiraiya still doesnt posses the reflexes to evade it.

A got a tip off when he looked into sasuke's eyes and went v2 raiton which increases his reflexes. Jiraiya can get a tip off if he senses it but his reflexes nor his speed are equivalent to v1 raiton A, let alone v2 raiton
