sage mode gives the user the ability to sense chakra,now my point is shouldn't sm jirayia be able to dodge amaterasu since its chakra based and he can sense chakra?

Only a perfect sage has the ability to sense chakra, so no Jiraiya can't considering he doesn't possess that ability.
