At worst, Sabo pushes Jozu to extreme diff. There's no way Jozu beats him at the lower end of high diff.

Unless he masters the mera mera no mi, no not really.
Pretty much for me the difference stands on their portrayal against admirals, there is a huge difference between fighting an serious admiral who has killing intent from an admiral who has no intention of even hurting u at all and most of the time is in its defensive form.
Sabo was struggling to make the admiral fight seriously and yet was panting and was bruised while Jozu made aokiji bleed and was a pretty good threat to him and only got beat when he was off guard due to marco, overall Jouz's feats far exceed what Sabo has done till now so for me Jozu still is considerably above Sabo, as of now of course.

I believe he can too. Jozu can't cover all of his body with diamond, so Sabo can just attack his weak spot if Jozu's defense is too much for Sabo.
Sabo (premera mera) vs. Ace - Sabo (Mid-High diff)
This is because, Sabo and Ace were portrayed equal in strength since the very beginning and Sabo became a known revolutionary without depending on a DF which pretty much makes me believe that he is a Haki beast. Secondly, the way sabo toyed with both burgess and diamante to get the mera mera no mi is astounding and this is post-skip burgess we are talking about here.
Sabo(mera mera) vs. Vista - Sabo (Mid-diff)
I personally think talking about vista holding his own against mihawk is bad example. Because even crocodile did the same for a degree and so did Jinbei against Mihawk. Also a point should be noted that, Mihawk kept his "Hawk eyes" on Luffy the whole time he was fighting vista, so it's not like Mihawk was being serious.
And Vista vs Mihawk was just like Sabo vs Fujitora (It all happened off-panel) and what we saw is both quitting the fight with mutual agreement.

I am not so sure about this fight, Jozu has a hax DF, the question is can the diamond stand against Haki? Can that diamond be coated with Haki?

Marco has not displayed any great Haki feats in the war. He sent Kizaru flying, but Kizaru keeps trolling ON and OFF.
But I feel pre-skip sabo would have won High diff. Post skip Marco would mid-diff sabo.

Jozu will win with high difficulty, mid if Sabo can't penetrate the Diamond defense. Jozu can combine Haki and his Fruit as seen when he managed to injure Aokiji and Crocodile with his attacks.
Marco's Phoenix Form can tank most if not all the Mera Mera's attacks; he was able to stop Akainu's Magu Magu, which is canonically a superior fruit. Marco's Haki should be enough to hurt Sabo; the common misconception is that Vista and Marco were unable to hurt Akainu: I personally believe that they were at least able to cause him some pain (implied by his "irritation" with them). Then again, Akainu has unreal levels of durability so it's not a fair metric to measure Marco's Haki abilities. This battle boils down to one of stamina, wits, and strategy. I'd give Marco the advantage due to his fruit and experience, but Sabo seems more versatile with his techniques. So this goes high diff either way.
