Itachi Uchiha can defeat the sage of 6 paths as well. This doesn't even require much explanation, it speaks for itself with evidence such as Itachi vs. Nagato. Itachi strolls up to sage of 6 paths, deflecting all ninjutsu using yata mirror, effortlessly stabs sage with totsuka blade... resulting in yet another powerful ninja fodderized by totsuka blade.

Plenty of examples come to mind of the created/creation destroying the creator. You seem outraged by this idea. The sage didn't create Sasuke anyways, he isn't really 'god'. The sage discovered chakra manipulation, Sasuke took it to the next level. Sasuke wins, high difficulty- but mid difficulty if the sage tries to rely on the 10 tails.
