He would have went nutz had DANZO done something to Sasuke. But thats only because Itachi had a ''deal'' with them so if it wasnt respected, they would have made them pay. But thats also because Danzo is a fishy character would does that kind a crap, and while some of his motives were for the greater good, above all, they were so that he would stand at the top (complex of inferiority to Sarutobi made him like that)
Had Sasuke died from random people like Deidara or Oro, he would have likely killed Deidara, and surely killed Oro.... but he wouldnt have became nutz in the long run.... he was far too mature and knew exactly what it meant to be a shinobi. The worst thing he could have done is to kill himself.... as the only reason he kept himself alive was because he wanted to make Sasuke stronger. Itachi wanted to die, Obito himself said he was praying for the RELEASE OF DEATH, living was already an agony for him, killing himself is the option that would have had the most chance of happening.

As the manga stated his mentality was of a kage since young..itachi is not immature like sasuke..he may seek revenge but he won't go crazy.

itachi would have committed suicide with all the pain and sorrow he had taken and all the things he had done to his clan and himself he would just end it there
He'd probably hit the sake for weeks and weeks and becomes known as the local drunk amongst the Akatski. Eventually he would lead on to hard drugs and begin giving people blowjobs for money to pay his addiction. Kisame won't stand and watch his best friend become a homeless junkie so he signs him into a rehab centre. Itachi would spend 6 months and too his surprise he would have a different, outlook on life. He would be a changed, stronger man and in time, he would be staying at the rehab centre helping poor shinobi that suffered the same past as he had, to help them come free of their addiction of heroin, crystal meth, and purple xanix.

LoL itachi would fodderize konoha, had any of it killed sasuke.
Itachi sacrificed clan in name of greater good, love for village etc. But he also drew a line and said clearly sasuke is off limits.

itachi drowned konoha in the blood of children yet couldnt get off his ass and kill orochimaru and sasuke who were greater threats
