Basically it's martial arts or hand-to-hand combat. It requires training one's body physically in order to achieve speed and strength. Examples of taijutsu specialists are Gai-sensei and Rock Lee.
There also exist other types of taijutsu users, which adapt their taijutsu to their bloodline limits. For example Neji and his gentle fist or Kimimaro and his "dances".
Gai and Lee also make use of gate openings to enhance their taijutsu beyond all limits.
That's about all I can think of by myself.

Then I proceed by making a small hop next to you and drop on your body with my elbow hitting your abdomen*''

Haven't really used taijutsu up to now because I haven't learned it... I've been keeping my distance at mid-range minimum and used only elements >_<
I guess if someone threw a punch at me with his right fist I would
*Quickly raise my right arm and place my wrist against yours, then turning my wrist to grab yours with my hand... while doing that, i place my left palm on your right shoulder and with both actions, I deviate your fist from my face while myself moving on your right side and use your momentum against you to pin you to the ground... while you are going down, i also bring your wrist back to me in order to twist your right arm backward, immobilizing you*

I remember it from the bell test. You basically get into the opponent's blind spot, join your hands together while leaving the index and middle fingers out, then you stick it into the opponent's ass and throw them away.
A kunai with an explosive tag can be used instead of your fingers if you are looking for more lethality/seriousness.

*Using Body Flicker Technique (which Gobi-sensei just taught me), I appear behind your clone... I kneel a bit down and thrust the kunai with both hands, inserting it into your clone's ass and pushing him away in the air... the explosive tag then ignites and blows him off in an explosion*

I jump at the opponent with a spinning motion to launch a high kick... the high kick is nothing but a feint that serves to bring about a desired reaction from the opponent, which in turn helps me successfully connect my next hit... therefore, while I continue to swirl, I use my other leg to launch a lower kick*

Alright! Next is Peregrine Falcon drop. Grab my clone, drop from heights, lock your ankles around his neck so that he cannot move and smash him on ground. *points at a nearby rift* have fun.
