"Well I know genjutsu is the ninja arts of altering the reality of ones mind and is induced via many triggers similar to hypnosis. It can affect both the user and the opponent alike and is even powerful enough to actually harm someone, even though not real."
Alright, your current understanding of genjutsu is extremely minimal but I guess its something to work from. Genjutsu relies on manipulating your opponent's perception of reality for whatever effect the user wishes to create. Genjutsu seeks to govern over your opponent's five main senses (Sight, Hearing, Smell, Touch and Taste), with Sight and Touch being the most commonly used. I like to think of it as the art of deception, a way of probing your foe into acting in certain ways and more importantly, avoiding certain actions. Genjutsu can also be used on the user's themselves to aid them in various ways.
Now, I want you to tell me how it works, how it affects your opponent, how you would overcome it in battle and what methods of releasing them you know of. Make this as detailed as possible, I need to gauge your current level of knowledge on the matter.
Genjutsu techniques are the illusion techniques of a ninja, they normally require hand seals. Genjutsu will use hypnotism to cause hallucinations in others. By causing such illusions they can cause their target mental pain and suffering just as real as physical hurt. Genjutsu is created when a ninja extends their chakra flow through the cerebral nervous system of their opponent to control their minds chakra, thereby affecting their five senses.
To combat the effects of Genjutsu, there are two options. The first option is for the ninja to stop the flow of chakra in their body, and then apply an even stronger power to disrupt the flow of the casters chakra. The second option is to have an outside ninja unaffected by the Genjutsu make body contact, and use their chakra to disrupt the casters flow.
You brought this upon yourself z.z. Good work, now we'll move onto countering Genjutsu. I will cast you in a Genjutsu and follow up with an attack and your job is to counter it successfully.
While saying this, Kakuzu silently forms two arms constructed purely of threads beneath his cloak.
He then performs a sequence of three handseals beneath his cloak through the use of threaded arms (making sure not to disturb his cloak in the process) and casts you in an illusion which appears to speed up time.
He then releases a geyser of water to launch himself across the distance separating him and his student in the blink of an eye. He ends up behind his student and deals a forceful kick to the back of his neck, which knocks him out cold and leaves him in a critical state. Should he fail to counter, he'll need to be hospitalized immediately. With the aid of the illusion, his student does not perceive his movement in the slightest until its too late.

Description: The user does a three handseals and spreads his chakra through the air. Anybody in the area will then be affected by a genjutsu that causes them to see things either sped up or slowed down to a extreme. This drastically hampers the user ability to react and target the user or jutsu techniques aimed at them, as techniques will seemed to be launched at them in blinding speed or slowed to a halt so while the user sends techniques at the opponent they are launched slowly, when in actuality the user may have finished his technique and gone onto the next one thus harming the opponent.

Description: The user gathers a large amount of water chakra under any of his feet and release it as a geyser of water to launch himself in any direction, depending on the angle that his feet maintain with the ground. This is basically used to shift in the blink of an eye from short to mid range and vice versa, or from mid to long range and vice versa. When using Hydro Kick, the user’s feet must be in contact with the ground/earth to give appropriate power to the geyser.

As Ishi had finished his long recited knowledge of Genjutsu he sees his sensei go oddly still. Especially after prompting that he would be attacking , Yosamu felt the air go oddly still.
Then, as if out of nowhere, a blinding pain slammed into the back of his neck, he felt instantaneously. His body then went into shock, his consciousness was extinguished, it was only his body trying to understand and recover from such a devastating blow now.
I'd like you to read the following transcript to get you up to speed.
The first step in realizing a genjutsu is observing for anything overly-obvious or something which would naturally probe your character's suspicion. In battle, I want you to observe even the smallest of disturbances in your surroundings and the slightest inconsistencies. I want you to notice, if a tree begins coiling around you, does it produce growing sounds as it emerges ? If a fireball is shot towards you, does the heat of the technique resonate from it and make you feel like the temperature is rising ? If you see an illusionary clone walking towards you, does it bend the grass when it walks ? If you get burnt by something, does the wound sizzle as the burn is inflicted ? Does the water beneath your feet ripple when you walk, or make any splashing sounds ?
Pay very close attention to the senses a technique affects, its fundamental to breaking a genjutsu. If a technique doesn't specify the senses it affects, make sure you don't assume anything. Find other ways of seeing through the technique. Does the illusion respect the laws of reality ? Does the illusion distort happen to abruptly and distorts the natural occurrence of events ? I can't teach you how to realize every genjutsu, I can only teach you the concept of doing so. The rest is up to how much you take away from this training. One thing to bare in mind is, when you're trying to realize genjutsu, don't come up with extremely complicated thought processes or anything which wouldn't be realistic in the heat of a battle. I don't want you to "god-mod" or try to use knowledge your character doesn't have to break Genjutsus. You must be realistic and legitimate in the way you break genjutsus. I'd hate to be that guy who teaches his students to metagame their way out of illusions >_>

( Genjutsu: Kai ) - Illusion Technique: Release

Description: The user does one hand seal to focus and then proceeds to disturb his chakra flow by forcefully stopping it momentarily and then "spiking" his spiritual energy, unbalancing his chakra. This dispels any genjutsu set upon the user except MS Eye Techniques, Paralysis-like Genjutsu and Demonic Illusion: Toad Confrontation Chant. The effectiveness of this technique is dependent upon the skill of the user. A Jounin rank ninja can dispel Genjutsu up to C-rank. An S-class ninja can dispel Genjutsu up to B-rank. A Sannin rank ninja can dispel Genjutsu up to A-rank. A Sage rank user can dispel Genjutsu up to S-Rank. The user may use this technique through physical contact on others to dispel them from Genjutsu. The technique can only be used once per turn and the user still needs to fully follow the logic as to why he figured out it was an illusion.
Using Kai to release Genjutsu is the simplest and arguably most common method. After performing a single handseal, the user will stop their chakra flow for a moment before spiking it to purge the opponent's foreign chakra from your body, hence releasing the illusionary technique. It can range from a C-Rank to an S-Rank technique, depending on the rank of the genjutsu you're trying to break. If an A-Rank Genjutsu is cast on you, you'll use an A-Rank Kai to release the technique. Keep in mind that even if you learn Kai, to break higher ranking genjutsus e.g. A-Ranks, you have to be of the right ninja rank (determined by posts). Also, it requires a single handseal to perform and so this technique can't be used against Genjutsus which paralyze/immobilize your body.
Other things to remember is, its a really uncreative method and some fights have rules stating either "one kai per battle" or "No Kai at all". Make sure to watch out for rules like this and don't become too dependent on using it. I don't think i've ever used Kai xD
2) Pain Release Method
Like you all correctly stated, Pain Release is the quickest but the most consequential of all Genjutsu Release methods. You can inflict this pain upon yourself in various ways e.g. removing a kunai to stab your arm or biting off your tongue. Usually people attempt to simply bite their tongue/the inside of their cheek but this seems like an invalid method.
1) Biting your tongue without removing it will break D-Rank Genjutsu at most
2) Biting off your tongue seems like a disgraceful/embarrassing method to use. Especially if you have to spit it out in front of your opponent. It will make them feel like they have the upper hand
3) The severe blood loss caused by biting off your tongue will give you about three turns to live (possibly less).
4) You can't talk anymore xD
And so as I say to all my students, never release a Genjutsu through biting off your tongue.
This is the chart of releasing genjutsus and the amount of pain you need to inflict on yourself:

Another nice way I learnt from Better to release Genjutsus is using the C-Rank Stone Spikes technique. When you realize a Genjutsu, whether it paralyzes you or not, channel your doton chakra into the ground and cause a single spike of earth to emerge. Angle the spike the depending on how much pain you want to inflict.

Description: This technique lets the user create a few rock pillars that will protrude from the ground to skew the target. The rock pillars will even pass through obstacles to reach their target
If you're breaking a A-Rank or below gen, angle the spike to strike into your thigh or another part of your non-dominant leg.
If you're breaking S-Rank gen (and have no other options), angle the spike to emerge directly beneath one of your legs, to completely crush it up to the knee region. This will keep you standing up and block blood from gushing out of your body.
This method inflicts serious harm on to you and is only recommended if you have no other options. Sometimes this is the best method to use and so its better to take many wounds rather than fail to counter a Genjutsu. Also, this isn't a possible method to use when you're standing on water or a similar terrain. If you have a bio which can heal or take such wounds e.g. Hidan, Kakuzu, a medical shinobi, using Pain to release genjutsu is very tactical indeed. You don't waste a move countering one of their techniques by making full use of your bio's capabilities.
3) Full body surges
A full body surge is basically a technique which releases/leeks chakra out of every chakra point on your body at the same time. This sudden burst of chakra purges any foreign chakra residing in the body. A full body surge will break Genjutsu of one rank lower than it e.g. an A-Rank Surge breaks B-Rank and below Genjutsus. New rpers often only associate the word "surge" which lightning techniques, when in actuality all elements have potential to be full body surges.
We'll be using the following template for all of the Genjutsu techniques we learn. You will learn two at a time, testing each and every Genjutsu you learn on eachother. Whilst under the effects of the Genjutsu, your partner will recite out loud how he/she can logically deduce why they think they're within a Genjutsu. Once they do this, they will successfully break out of the illusion and cast the other in the same Genjutsu. The faster you take to this and the more detailed your replies means we'll breeze through Genjutsu.

Description: The user casts an illusion over an area that allows him to manipulate the way an area looks to fool an opponent. He can only change the way the terrain looks, and not any other feature.
For the first technique, I'd like you to cast your partner in a genjutsu which changes a single feature about the battlefield itself e.g. makes a wall rise up, creates a pond or water source and etc. Quite a basic technique, doesn't require much explanation.
Key Points: Cannot effect things which aren't considered the terrain e.g. masking the fact you've thrown a kunai. Also, pay very close attention to wording. This jutsu only changes the way the terrain looks, meaning no sounds and smells are produced along with it. Also, any features you create, are of course intangible.

Description: The user makes five handseals, appearing to dissolve into a shower of cherry blossom petals. These petals surround the opponent, blocking his vision. This allows the user to mask his movement effectively.
After doing that, I'd like you to perform a string of five handseals to cause your partner to see you "dissolve" into a cloud of cherry blossoms. These same cherry blossom petals will move towards the opponent and cloud his/her vision, allowing you to mask your movements in reality.
Key Points: Lower ranking techniques tend to control less senses, this probably controls the sense of sight *hint hint*

Ok I know that Genjutsu is the art of illusions which are fueled by the user's chakra from his body. These illusions are made to fool the senses in various ways and limits. This happens by using techniques to manipulate the flow of chakra to the opponent's brain thus affecting whichever area needed. Genjutsu, "Illusion Technique" is what it says and as such is not real. Now to combat Genjutsu one must realize the flaws in the illusions and must then break it through Genjutsu Dissipation (Kai), pain, or chakra surges throughout the body stronger than the chakra of the Genjutsu being inflicted.
Inflicting minor pains on the body, like biting the lip for a low tier Genjutsu. Piercing the thigh, for a medium tier Genjutsu and the ultimate sacrifice! Ones entire limb for a high tier Genjutsu. The pain is used to take the brain's attention off of the illusion- which in turn breaks the illusion at the cost of comfort.

Alright so this first technique on the list allows you to make visiual changes to the battlefield by changing the way specific area looks within the illusion. And keep in mind that it is only visual. You can not augment the sounds or smells and similar. Now tell me, if you were in a battle how would you release from such a genjutsu?
If in battle I would use this jutsu to mask an underground technique I would have planned. Say for example I used this move:

Description:The user slams his hands on the ground and creates a 1/4 dome of earth, which protects them from frontal external attacks. The domes shape is in a similar fashion to wood release: wood locking walls.
I would initiate False Surroundings to mask this from the opponent's vision fooling him to think it's not there. Of course I would need to perform the illusion after I made this construct as the sound and vibrations on the ground would be a dead giveaway. Then, if the opponent obliviously attacks he would be left to slam into my very well thought out dome of earth. So what if it's B ranked..
If I move on the ground and don't notice my own foot steps, or I perform an earth disrupting technique and don't see any change in the environment, y'know, simple details.
