Actually, I think it's Mouton Shot. Though now he's been using Diable Jamble more and more. But I feel it's at the level of Luffy's Jet Pistol, and Zoro's Oni Giri. Also, I don't think Zoro's is Oni Giri, I believe it's Shishi Sonson. Then again, what exactly is a signature move? I'd say it's a finisher... So Luffy would probably be Gomu Gomu Bazooka

I would also pick Mouton shot or Anti manner kick course.

Those are his two regular finishers before Diable Jambe.

Even though Diable Jambe is used a lot, I don't see it as a signature move. It's used so much that it's almost common.

A signature move should be special.
