his title as professor was due to him knowing about all the jutsus in konoha. but many, like when minato appeared came into it when hiruzen was already old. thus "prime" hiruzen in terms of physical health is actually less versatile and has less intel on his opponents. in that sense, hiruzen really did die in his prime. he lacks death god as "prime" hiruzen.
nevertheless, the hype really doesnt stand up well in this day and age. the manga and databooks are full of hyperbole or simply contradicted facts from part 1. his hype as the "strongest shinobi of all" was from iruka and in front of a bunch of kids. hiruzen even berates iruka for implying it was no longer true because the kids would react badly to that. the god of shinobi thing is again, merely word of mouth. fairly obvious oro said it in a mocking way, as if he never believed it himself anyway. we're talking about konoha as well. its obvious they will embellish their hokages to be better than they really were.
at the end of the day, we were given a chance to see younger hiruzen in action and he ended up getting saved by minato. no one in the other villages ever commented on hiruzen, and kabuto hyping him as strongest of the kages is again word of mouth made by others, and not taking into account onoki's jinton or A's speed. A fought gyuki head on countless times and even cut its horn. he fought minato countless times. hiruzen couldnt do jack to kyuubi and was scared shitless of minato being revived. just saying.
