and in addition to that the mist is slowly eroding the outer layers of Susano'o which means Itachi will have to exert extra chakra and focus to sustain it. And that's not mentioning the physical burns and pain that comes along with that

Sasuke was perfectly fine until he tried to up the level of his Susanoo, when he failed and fell and reverted to Ribcage, that is when the Acid Mist got through, not after and not before, so Itachi isn't going to be damaged at all.
You are right, but suitons could be useful in other situations, such as extinguishing katons, pushing back Susano'o, blocking the line of sight, putting Itachi under pressure, etc.
Meh, none of those help much regardless, except maybe the bold. Itachi's Katon can evaporate the mist, as mist is just water particles suspended in mid air, but if its countered with Suiton, he fails....however Mei isn't even going to see Itachi or his attack due to the mist.

Acid Mist does nothing to Itachi, only his Susanoo. Itachi doesn't need to exert more chakra to maintain Susanoo than he already is, just because its getting damaged in this case. Baseless assumption. Lava isn't doing anything when it pretty much only inflicted superficial wounds to a Skeletal Susanoo. V4 is a Complete Susanoo w/ Armor added on top of it. Even if she somehow gets through all of V4's armor, V3 is still under there, undamaged.

She did nothing to that Susanoo but inflict superficial wounds, not to mention V4>>V3's hand when it comes to durability. Acid Mist and Lava combo isn't doing anything to her.

So the Lava does bounce back right at her, and scans that show she can tank her own Lava? How in the world is she even landing these attacks when she can't see through her own mist?
I assume you are referencing how Sasuke escaped into the other room where he was unaffected by the acid mist? The only reason it didn't spread into the other room was because Mei adjusted the pH level so the other kages weren't affected. Mist also doesn't naturally just drift upwards into the air and disperse like smoke, it sits low and heavy close the ground and Mei can stay surrounded by it. Itachi needs to get close to her to even land a hit.

because it was going to spread into the other room. pH has nothing to do with mist spreading or not anyway. If it wasn't going to spread, there was no need to adjust the pH to begin with. So yes, the mist will seep out of the hole and out of the cave.
Just letting you know, Kabuto was taking advantage of Mu's sensing ability to detect Onoki and Ay coming. He probably didn't see them.
