No he never said he wanted to go straight for Shanks. Not to mention Luffy is always saying stupid and confident things. Luffy saing that he's beating all the yonko doesn't mean he's doing it right here right now. Obviously he'll have to get stronger. Luffy has alot of confidence in himself that's his personality. No. Luffy just happened to be the first one he met while at PH. Also, out of the supernovas Luffy would be the only one dumb enough to actually trust someone like Law. Law doesn't believe in Luffy being able to beat Kaido that's exactly why he said 30%.

It wont be a good fight at all. Doflamingo himself admitted that Kaido would take a dump on him. That's why he's scared of Kaido and scared of losing Caesar. Because if there's no Caesar there's no SAD and if there's no SAD they can't produce Zoan fruits and if they can't do that then Kaido is coming after Dodo. Not to mention Law himself is confident enough to throw his life away knowing that Kaido will deal with Doflamingo Neg-diff.
