I think if Coby eats it then Luffy wont be able to fight him because itll remind him of Ace. Just saying.

He would die. He said he cannot eat it to Franky near the start of the arc.
Fujitora and Bastille should raid the coliseum and give Garp the fruit so that he canchoose who inherits the power of the Mera Mera no Mi. Coby.

He would then become a far more interesting enemy of Luffys.

That's actually another reason why I think he will eat it. So is he does face Luffy, Oda will show us how far Luffy's grown emotionally (and how far he's character's developed) to understand that his memories of and feeling for Ace come from within his heart and not from some fruit which many people before Ace could've eaten.
