Madara wasn't immortal. He was almost killed by Gai, and Hagoromo himself was a mortal man who was old and dying even when he still had the juubi inside him.
The Yin/Yang seals are the only way to beat him but he can evade that with the use of Limbo's.

That was because he didn't have the other Rinnegan and any other jutsus would be pointless being that he had the bijuus, the gudou damas, Limbo and Hagoromo's senjutsu.
