About the "hair" thing. . . hmm

The hair thing has already been discussed, but now we can add another person to the list. Hiruzen and Kankuro both have white hair in the manga but brown in the anime. This still doesn't change the fact that Yamato has the same tone of hair, if not lighter, and has black hair in the manga. Either way, I will edit the OP and concede to the hair argument. The hair color excuse is definitly not a deal breaker. The manga has shown many charcters with white hair while their hair is dark in the anime. One example is rin.
Anime is not canon because Naruto didn't know Utakata, who he met in the anime.Ususally if a character that appears later in the Manga shows up in the Anime, It's Kishi's Character. Alternatively, he just needs to keep the anime and manga running in the same universe, more or less. Anime is canon, but noone in NV cares. The Ostrich can go burn in hell.
Saying the movie explained their deaths is a logical thing to do, but all anime, which includes movies, are not cannon and therefore never occurred in the workings of the manga. Its a nice thought that the anime explains how they died, but its simply not true, the died in some other way that is actually consistent with the manga.Doesn't Kishi have things to do within the films, Pakuara, Gari and the other dude are all canon and Kishi just used the film to explain how they died instead of wasting pages and using lame flashbacks.
