Hiruzen is at the point where he has so many jutsu Kakuzu will have no idea what is coming next, and probably will be thrown around until he is inevitably shredded by the elementals.

Old Hiruzen wins mid-high diff and Edo Hiruzen wins low-mid diff. Edo Tensei doesn't make one stronger nor does it increase chakra reserves, the reason why the difficulty goes up is because Hiruzen can't use his techniques and clones without being careful of his jutsu, but the fact that he can match and overpower any of Kakuzu's elemental Jutsu with the appropriate counter doesn't change.

Edo Hiruzen destroys him because any move he uses is countered with it's elemental weakness and then the mask gets killed after losing the jutsu clash.

I'd imagine since they depend on organs, a chakra network from previous shinobi and can move autonomously as well.

I'd give the nod to Hiruzen.
His elemental prowess can counter what Kakuzu dishes out, and bunshins + Shiki Fujin is a deadly combo. High diff for Sandaime.
