Yamato was more composed when he faced Orochimaru but Kakashi's fear was so great it was coming out of his ass, NO KIDDING!

because yamato wasn't alone, he had fourtails naruto, sai and sakura on his team. Also it was possible that a genjutsu that orochimaru cast on kakashi by oro which allowed him to see his head getting cut off.
