Without sharingan, Itachi's genjutsu is less than nothing.In the manga he used only 2 genjutsus (crow,ephemerak).Even his sharingan genjutsu is nothing against Kakashi.
Since Itachi can only use what he showed in the manga ,Kakashi without sharingan will not be affected by these crows and ephemeral genjutsu level.He's largelly skilled to know about genjutsus, he has a knowledge about genjutsu long time ago.
He did similar genjutsu to Sakura without Sharingan in first chapters so genjutsu is useless in this fight.
Kakashi use regulary elemental clones.There is no way for itachi to detect it.A raiton clone cost a few chakra compared to Shadow clone.The fight can end quickly and Kakashi has by far more advantages.Itachi risk to be paralysed and electrocuted, and he would spend his chakra fast.
We know that Itachi has low stanima,A kakashi without sharingan would have a big advantage uppon him.His 2 genjutsu, katon and suiton , let alone shurikens attacks it isn't enough for somoene on Kakashi's level .Kakashi know almost everything from Itachi.Itachi has no choice to use the same jutsus again, but same jutsus that ahs failed before won't works against Kakashi .
As i said ,in a 1vs1 fight Kakashi can trick him with a raiton clone.It consume few chakra,i don't remember any failed clone strategy from kakashi.Itachi without Sharingan will get trouble in front of the versality of Kakashi who will gain more stanima without sharingan in addition of the current improvements.
People says Kakashi coulnd't follow Itachi's handseal.It's wrong and he proved the contrary , people only read Kakashi's words just after 1 attack , i'm basing to his actions, actions > words. Kakashi noticed his feint with kunai and just saw that he used a suiton,otherwize he'd not use suiton too.It was almost taijutsu range 'close range. Despite the few time kakashi had to react (close range), he was still able to block itachi's suiton with a suiton , prepare a suiton clone, and finally know that Itachi was a clone to save kurenai.It's a bit a lot for someone who is suposed to not see Itachi's movement. Even an Itachi with sharingan coulnd't trick kakashi,his victory was clearly due to his mangekyou.in this rare case close range fight (dialog/interrogation context) Itachi coulnd't touch Kakashi with his suiton.
Kakashi can use multiple of Jutsus without his sharingan,he has nin-ken dogs .I'm not even sure how Itachi could handle it when he we know that he barelly avoid Kakashi's clone's upercut in their 2nd fight.Now without sharingan ,he'll have 8 dogs under on him.
Not to mension all Kakashi's other's jutsu like his raiju hashiri which he can do without handseal , extend and control its trajectory.He can use rasengan without his sharingan.raikiri can be countered because it's an assassin jutsu the users have to run straight line with incredible speed.It's not the only way to use it, for exemple in a taijutsu battle it can be very usefull.
Also even Sasuke used his chidori without his sharingan when he confronted Naruto.
Itachi without Sharingan will not only be limited to predict movement but he will only be able to use jutsus that Kakashi know already ( suiton, katon, 2 genjutsus).In close range both will disadvantaged without sharingan but Kakashi showed more experience prediction skill withou sharingan in the manga like when he won against Gai without sharingan, whereas Itachi was almost always relied to his sharingan during his life.
Both Itachi and Kakashi will not be able to predict other's movements but Kakashi has a non negleagable advantages there.
The gates , yes Kakashi can open at least 1 gate .

The only small advantages Itachi had to Kakashi was to has slighty faster according to the outdated databook who stopped like stopped like 250 chapter ago we have 1/3 of the manga that need update and manga clearly shows Kakashi improvements in speed, chakra etc...Whereas Itachi was dead longtime ago.
Kakashi has all the advantages here, both are smart in battle strategy but Kakashi already outsmarted him multiple times here.His Doton or raiton > Itachi's Suiton and his Suiton > Itachi's katon. Itachi has barely nothing but good speed and weapons which isn't enough against somoene on Kakashi's level who can even use his nose and ear better than anyone.
Without Sharingan,Kakashi win.

Kakashi can take an advantages in taijutsu with gates.Not to mension his speed improvement during the war.Now he can keep up with Gai 6th gate speed, handle bijuu v2 while Naruto and Bee was barelly able to avoid their speed and attacks. It means a lot when Sasuke who fought Itachi got owned 2 times by Bee's speed even at 4 vs 1.
