Their are enemies too fast for Kamui, in theory it would work only against those who don't have the speed or defensive capabilities.

If Kakashi learned to use kamui better then he could instantly "snap" the head off, so in that regard, speed is irrelevant.
I don't know who's kamui is better, but if they are equal then their heads would disappear at the same time. Either way kamui is the most op jutsu.

He could if he could actually use it like that. The only time we saw him use it on a part of enemys body was Gedo Mazo.

No, in his normal one sharingan eye state, but with both sharingan eyes yes, i think he can do that.
But with normal eyes he is just Kage level, a little less than Kakashi with one sharingan.

Kakashi does not need Sharingan to solo anybody he has 1000 jutsue at his disposel. He can toy with his opponents with any of them.
