It's unlikely that all marineships have kairoseki coating because it's a rare material, so Smoker's G-5 reject ship might not even have that. When has the manga ever hinted to the hardness of a substance playing an effect in Law's ability to cut it? Nothing suggests that diamond's strength/hardness offers any kind of resistance to Law's powers.

Manga never hinted that there is an effect, but it never said there wasn't either. A diamond man with good haki will probably be harder to cut than a jelly man.
