Itachi?

We all know that When you use either Izanagi or Izanami you lose your sharingan in that eye, but seeing as Itachi used it during Edo tensei, would Itachi have both Sharingans if he was once again brought back using Edo Tensei?

yes he would. You get evreything ( expect weapons) when your bought back.

Sorry but no one in the manga NARUTO has tried edo summon twice on the same soul. So its a bit harder to say.

Actually you have seen someone be summoned more than once. Now when someone is sealed away or their soul is at peace and therefore released that way they cannot be summoned again but we have seen Kabuto summon edo's more than once. When he first met with Tobi Kabuto summoned several edo's including Madara to show Tobi what he was capable of. He later closed their caskets and sent them back but either way they were summoned and he then summoned them again later during the war. So as long as Itachi is not sealed or his soul released due to him being at peace Kabuto can re-summon him, with the condition he still has some of his DNA to infuse with the sacrifice body.
