Maybe some do, but I like Itachi for his character and how cool he was as a ninja. No wasted moves, always calculating, using the weakest of the jutsu to maximum effect and one of the best tactician.
See how he played Sasuke and undo the Edo tensei, that says a lot. So no he's not overhyped at all. But I agree yata defense is not absolute.
