His character development would become shit. Actually Vegeta never wanted to become immortal.. He thought he could become invincible if he became immortal. But what he really wanted to become was the strongest ever, invincible. He never really sought after Dragon Balls even after being on Earth for so long. All he wanted was to surpass Goku and become the best.

If he became immortal, we would have been robbed of the character with best development in series

When it comes to immortality it would only mean that he wouldn't age but him getting the wrong idea from the thought he would most likely do something reckless which cause him to realize that he's not invincible and most likely die and be brought back with the dragonballs
