I wonder why Kishi doesn't do a Hinata gaiden

I mean wouldn't it be cool to see what Hinata was doing, I mean in the manga we only see her doing 3 battles which are:

1st Hinata vs Neji
2nd Hinata vs Pain (so short but couldn't expect more due to Pain being OP)
3rd Hinata vs Edo for short panel
4th Hinata vs Juubi for a short panel

I mean it would be cool to see what Hinata was doing maybe doing missions, her training etc.

The Last was much better than Gaiden at the very least. However, that is not a hard feat to accomplish.

The Last basically covered everything about Hinata.

A new Gaiden would be wasting people time to read it. Her skills are also uninpressive to expand further upon. Someone like Itachi definitely deserves to get extra attention like through novels or an anime only exclusive of him because the manga sent him packing before he reached his true potential. Someone like Hinata is going to be a waste of time. I never seen Hinata come once out of a fight before being healed by Sakura. A character who is only on her husband's D and refuses to stop chanting his name doesn't deserve a new manga.

A Hinata gaiden? Hinata's story is over, and 'Naruto' is over. It's now moving onto 'Boruto'.

But If we ever saw what she was doing, it's probably be 'housework'.

By family do you mean her present family or her old family with the Hyuugas. The Last showed her life with both families as there was a timeskip.

Of course I am talking about the Hyuugas and The Last wasn't really about their personal problems.

The Last didn't do much for Hinata's family but then again, it was her biggest role. That's why I'd consider it her "gaiden."

I'm surprised that there are still NaruSaku shippers around, ho well.

At this point in time, it'd be redundant. He could've given her some more time in the manga, but he didn't. She got her dream in the end anyway and quite frankly, her story had nothing else to be told.
