Edo Tensei: A technique the brings back to "life" who ever it wants as long as it has some DNA or something, it brings them back exactly how they were before they died (there healthy state of course).

and the answer is: because edo tensei brings back people in their full health state, that means they have everything they had before they die, and itachi had his eyes when he died
