Well what we do know about him:
1. He heals but doesn’t bleed (or he would still have a huge gash through his eye from the fight w/ his shadow samurai)
2. The calcium from milk goes straight to his bones and gives him some sort of power up (despite chopper saying it shouldn't work like that.)
3. He dose in fact poop, as well as create other bodily fluids like tears snot and drool without the body parts that make them (like eyes)
4. despite being able to heal his hair wont grow (he said so himself)
5. He somehow has all of his senses (seeing, haring, tasting, and feeling) without the corresponding parts (nose, eyes, mouth, tongue, skin, or a nervous system)
6. He can think and operate without a brain, though that could be explained: spoiler for people until mermaid island arc.

He doesn’t use his body or mind, he thinks with the soul his revive-revive fruit provided after he died to think, this is proven when he separates his soul his body becomes inanimate

Feel free to add to my list but these are confirmed things with or without explanation. Worse comes to worse we can just say the fruit causes this to happen. *_*
