The only major fight that Itachi wasn't serious in, was the Hideout fight. But vs. Nagato, Kabuto and the like, he couldn't afford not to be serious.

Actually anybody could have soloed Itachi. But Kishi knew fans like you would commit sucide at its first thought. So he never tempted to show that day.

On top of being a top class shonobi Hashirama was also a very humble loving guy. Who would at times over hype some characters to make them seem unbeatable. In the end of the day Hashirama knows he could solo Itachi. He just didn't want weak hearted fans like yourself to feel bad about your favorite.

Hashirama is used fighting Uchiha's, so it won't be a problem.
Totsuka can be dodged, only Orochimaru in his summon and a crippled Nagato where hit by it.
Itachi gets devastated by every tech from Hashirama.

The wood dragon alone would already make his Susanoo useless, with the golem he would rape Itachi.
