GF is a style, regardless of if the byakugan is a KKM or just a regular byakugan
it is GF because it uses that dojutsu's insight abilities to its advantage
it isn't called HYUGA FIST and they style predates the Hyuga's existence as the same databook says it came from Kaguya
I've just given an example of why GF isn't "using chakra to attack chakra" as you said. And then, as you agree, said that GF is a style that encompasses all that a Hyuuga can do.
Byakugan is a dojutsu, even Kaguya's byakugan is. Kekkei Mora is the combination of all the elements (or at least, more elements that a kekkei tota), which is far above the abilities of any Hyuuga (and pretty much 99% of Narutoverse)
Where was it stated that the fists used the Byakugan to it's advantages? Having it activated while doing pretty much nothing is not the same as saying that it required byakugan to perform. As a matter of fact, I don't see the Byakugan activated when it hits Sasuke in the image I pasted above:
