With a Normal Dude:
Well majority of people have 180 degree vision forwards, 90 degrees left and right (While looking straight). Now if a person turns his head to the left, the 90 degrees from his right ear heading to his back, would be out of his field of vision, leaving a space open for opportunity to strike from that side, since he can't see that side and would have to turn his head to see, and then he would still need to think, then still would need to react. So it's important to know which way the person is looking so you can either create opportunities by making the target look somewhere leaving an area blind, or just by attacking them in a blind spot (Behind them).
With a Doujutsu user:
Sharingan Dude: Like Kakashi said, when facing a Sharingan user, spread out. This weakens the Sharingans perception ability as the user would need to focus more on one spot. But with people spread out, it would be harder and more difficult to predict or use the Sharingan to it's proper standards. For a sharingan user, the target must be in it's line of sight for it to use the majority of its abilities. So forcing the Sharinganer to look somewhere else is a good move.
Byakugan Guy: Well they have nearly 360 degree vision so it's much harder. And being a Byakugan user myself, it's easier. Attacking from behind, below, on top, or mostly any other preposition, wouldn't be so effective as with the above 2.

Well said, actually, allow me to emphasize. If you are able to completely distract an opponent with a frontal move, covering up even their peripheral view, like a massive fireball jutsu, you can take advantage of their current weakness and also hide another move behind that current move.
Against a Sharingan user, you must train their eyes on the top level of their chest, so that although you can't allow yourself to gaze into their eyes, you can still see and predict the handseals they use and the jutsus.
Against a Byakugan user, their blind spot is on the back of the neck, so it's important to know where they're gazing at.

While my target is in a hypnotic trance, I take advantage of his weakness, and spew a lightning spear from my mouth quickly, which reaches and pierces his neck.

LOL, I know right? But remember you are also hypnotized, so it would take some good willpower to be able to move your body.
I guess it plays more on the double vision concept than anything else.
Now, for this next jutsu, for creattivvittyyy!
Take over all five senses of my clone and then have him believe that several vines are immobilizing him, lifting him into the air. Then, YOU RISE FROM A BEAN POD...*dramatic drum roll*...READY TO SEND HIM TO HIS DEMISE!

I inject my chakra in to your clone. I manipulate my chakra to take control over all his senses. Through the control, I make him see and feel and hear several vines grab his limbs, immobilizing him, He then sees the vines lift him in the air. As he is being lifted in to the air, your clone sees me rising from a bean pod *Dramatic drum roll*. The vines then rip his LIMBS! ONE BY ONE! AND OUT OF NOWHERE, SHAO KAHN SAYS IN A REALLY COOL VOICE THAT I ALWAYS IMITATE AND SAYS: FATALITY. AND THEN BLOOD IN MID-AIR FORMS THE WORDS!!!

I inject my chakra again in to your clone, taking over his senses again. This time, I make him hear/see a flower that grew behind him and bite him in the arse trapping him in its vice grip. The flower then explodes sending him flying. Though in reality, it will just stress his mind and damage him a bit.

Alright, for this next jutsu, once again take over my clone's five senses.
Then make him believe that you have dissolved into a mist, and as that happens, step close to him as you continue the illusion further by having a tree come out of the ground and bind my clone.
Afterwards, by timing the jutsu, make it appear that you come out of this very tree and strike my clone down.

I channel my chakra in to your clone, and I manipulate my chakra to take control of his senses. I cause him to see me disperse in to a mist, and as he sees me dissolve, a tree rises from the ground and binds the clone. I then appear above him, coming out of the tree ready to strike, in which I do strike, stabbing his eyeball out.
Well done. Self-explanatory jutsu, but you must state that it IMMOBILIZES THE ENTIRE BODY, thus they can not use Kai. Remember this.
The next one is similar, however, this time, instead of a tree, make my clone believe that a snake came out of the ground to first...
- Constrict his movement.
- Crush him on your command.
Now, say you were trapped in this jutsu. How would you get out of it and what would be your reasoning?

:ghehe: I was reffering to the part where I must defend against it. If someone used it on me, I don't know how I would recognize it's a genjutsu...
I inject my chakra in to your clone, controlling his 5 senses with my chakra. I make him believe that a snake came out of the ground, to wrap itself on his leg and then the rest of his body. The snack the constricts him of oxygen, squeezing him to death.
