This may contradict common belief but i'll show you how Gaara can evade every single doujutsu/(nin/gen)jutsu.
Itachi- No illness.
Gaara- Jinjuriki. However, No Bijuu Mode
Lets discuss.
Susano'o
Pretty OP'd doujutsu. This doujutsu cast summons a humanoid around the user which sort of looks like this:
Itachi's Mangekyou version of this humanoid has a sword (totsuka blade- which originally belonged to the Sage of the Six paths) and also an impenetrable shield called Yata Mirror. This allows itachi to be on the offensive and defensive side simultaneously. His Totsuka blade has been shown to be able to seal and trap people in a forever ending Genjutsu. Example:
Nagato would have been able to avoid that hit if he wasn't an edo, but that's another matter. His Susano'o (like any other) has been seen to have stages (sort of like Super saiyan 1, then 2...). Similar concept with Sasuke's really. The weaker the doujutsu caster is when the Susano'o is present, the weaker the Susano'o gets. Other factors that we have seen to affect is what emotions the doujutsu caster is feeling. For example, during Sasuke vs Kakashi, Sasuke's Susano'o was pretty weak. Then after something Kakashi said, we seen Sasuke's anger level rise, therefore the Susano'o moved up a stage, thus meaning that Sasuke's hate was fueling it. On the other hand, in the war, when you saw Madara's Susano'o, his Susano'o was on its first stage. Why? Because if you take a look at his face, you would be able to see that he's not feeling any strong emotions... just amused. In the spoiler you can see that Susano's ribcage's are still exposed, and that he's not at all serious.
Whereas when you see here, he's thoroughly serious and he's Susano's ribcage isn't exposed. If anything, it's reached it's highest and final stage. The reason why it's at its highest stage is because he's feeling a mixture of powerful emotions, such as anger (towards senju, aka Tsundae), thirst (for blood), and also hate (for senju).
How will Gaara counter Susano'o with Totsuka blade and Yata Mirror?
Pretty easy really. Gaara still has his ultimate defence. His ultimate defense is so fast it's capable of countering Amaterasu, which is another doujutsu i will onto later. If his ultimate defense is capable of countering Amaterasu the instant it materializes, then what's stopping it from countering a swing from a blade that's capable of only sealing and slicing? And before you say it. No. Totsuka blade wouldn't be capable of slicing through Gaara's ultimate defense. This is because when you put pressure onto Gaara's sand, it contracts, making it difficult to cut through. The only thing that we seen that was capable of cutting through it was Sasuke's chidori. This is because chidori is obviously a lightning jutsu. It's lightning power concentrated in a small, limited space (the palm). This gives it excellent cutting ability to such extent that it went past Gaara's sand here:
Or maybe was Gaara's sand not thick enough?
Who takes this round?
Simply Gaara. Due to the fact that his ultimate defense can protect him from the Totsuka blade, so the blade is infact useless. In addition, there is a possible counter to Itachi's Susano'o. Remember during Madara's fight with the Kages? Gaara was able to channel sand through the earth and out beneath where Madara was standing. He then wrapped the sand around Madara's Arm and literally pull him out of the his Susano. Gaara could do something similar.
Amaterasu
Amaterasu is another doujutsu from the Mangekyou Sharingan. It's the highest level of fire release as it's literally capable of degrading anything the doujutsu caster has set it on. It's also so powerful it stays ignite for 7 days and 7 nights. However, we've seen that Gaara's ultimate defense sand is able to counter amaterasu out with ease.
Who takes this round? Gaara. Why? because Amaterasu is useless against it.
Tsukuyomi
Hm... this is the 3rd and final doujutsu technique from Itachi's Mangekyou Sharingan. It is a Genjutsu whereby the caster controls time, terrain and what goes on. For example, he can (like he did to Kakashi), torture the victim physically in the genjutsu, or torture them mentally in the genjutsu by replaying painful moments in the past (like he did with Sasuke). And the beauty of it is that it's only 1 second in reality.
Gaara wouldn't look into his eyes because he knows that Uchiha's are capable of using genjutsu through their sharingan. But he accidentally may, but i doubt that itachi would be fast enough to actually activate his MS and actually cast it. Also, I doubt that Tsukyomi would actually work against a Jinjuriki.
Who takes this round? Itachi. Because he will possible find a way to cast Tsukuyomi. That's IF it works against Gaara.

That works on bad guys, and obviously Gaara isn't a "bad" guy.
Overall:
I think Gaara wins by 2:1. Gaara is just a really bad match up against Itachi seeing as most of Itachi's techniques/doujutsu are avoidable by Gaaras Ultimate sand.
