Just to be realistic: His chakra is INFINITE. He can make INFINITE number of Susanoo clones.
It was plot no jutsu.
Like the Madara vs Naruto, Bee, Guy and the Allied Shinobi forces.

How does Gaara beat Edo Itachi? Just because Gaara has a sealing jutsu doesn't mean automatic victory. Edo Itachi can spam MS Techs, like Tsukiyomi and he can maintain Susano'o. And Gaara can't take him out off Susano'o without Onoki to make his sand lighter, he can most likely beat a Sick Itachi but not an Edo Itachi, MS Sasuke or EMS Sasuke.

Depends where they fight. In a desert, Gaara would surely be difficult to handle, but he can't keep up with Itachi's speed making jutsus. He will eventually get caught in a genjutsu. Sasuke's raiton affinity puts him above Gaara
