Excel Absolute Cell Referencing

Hi i'm doing an assignment for school using Microsoft Excel and the only thing i dont understand is absolute cell referencing.

What is it and how do i do it? Basically i need to use absolute cell referencing to work out things like profit, loss and average but i don't have a clue.
