You can merge with ground, trees and water making you almost impossible to detect. And move at very high speed through them. Zetsu watched the battle between Naruto and Sasuke at the Valley of the End, then he was spying on kakashi and guy teams. Next he was using mayfly to watch the Sasuke vs Itachi fight, and then in the five kages meeting...
It helps to spy on the enemy...
And you can merge with water and trees that you can't do with normal earth techniques... (I guess)
