the reason people use the earth for their dotons rather than make their own dotons from their mouth is the same reason kisame uses a lake or ocean to make his suitons when he has one available or why Sasuke uses a thunderstorm for kirin. There's almost no point in having to make the raw materials from your own chakra when you can just manipulate natural earth at a lower chakra cost.
