Sakura and a lot of other girls (the fangirling type mostly) have the cultural psychological conditioning of wanting to marry, to marry the "coolest" boy = good looking, high status, desirable, wanted by other girls, popular, successful.

I'd argue this isn't just Kishi being "sexist", it's a cultural thing that's evident in present day - but with the historic elements in Naruto-verse, it makes sense that the majority of women are defined by their roles as wives and mothers.

Sasuke during their time at the Academy was everything a girl wanted - now it's Naruto who has achieved that status.

And the NaruHina fluff is eh...That right there is the stuff girls like Sakura dream of, "epic fairytale romance" where the girls who has loved the boy so faithfully for so long and suffered so much through it all finally gets the guy.

Hinata gets everything that Sakura wanted (with Sasuke) - so naturally there is envy, to laugh it off as something purely ridiculous - a joke that "...Queen Sakura can envy that fodder Hinata..."- just highlights your delusional state regarding these characters, an underlying cause in Sakura-rabid-fangirling

Though I wouldn't be surprised if Sakura has other feelings mixed in. She might have come to rely on Naruto's devotion to her, the compliments he paid her - a boost for her (damaged) ego.

That attention and devotion has utterly shifted to Hinata. Not only that, Hinata is the centre of everyone's attention - marrying the hero of the shinobi nations (don't kid yourself that Sasuke is loved remotely the same way).

So in short, she has everything Sakura wants - even if Sakura wants that with someone else.

There's also the fact that Hinata has a rockin' bod, huge breasts and a nice ass. Sakura's always had issues about being flat-chested.
