How do fireballs clear away mist? They will illuminate a small area for a moment with their brightness but once it fades the mist just comes back. Not to mention, Mei can extinguish the flames with her suiton before the fire even does anything, forcing Itachi to put up his Susano'o in response to the attack.Any kind of Katon tech from Itachi will clear the mist. Idk where you're getting the heat/smoke argument from. And even if that was true, there's no proof that Sharingan can't see through the smoke.
Regardless of whether Suiton can counter his Katon techs, the fact that there is any kind of Katon in the environment means the mist will be gone.
