Orochimaru have Edo tensei, while Tsunade and Oro fights, he could summons them and then let Jiraya get his time. Really, he can't defeat the sannins :|

Orochimaru could also use Sanjū Rashōmon, which is stated to block almost any techniques, or even Triple Rashōmon that is x3 better.

Whats to say he doesn't already have it prepared for the situation? all 3 Sasnnin have intel on Itachi already, and Jiraiya would be prepared for Amaterasu & with the help of Orochimaru & Tsunade, and all there summons, he can enter Sage Mode. Itachi would have no choice but to go for Jiraiya 1st & try to eliminate him from entering Sage Mode, Amaterasu won't work on Orochimaru and possibly Tsunade (theory) because she can heal herself as she burns if she gets caught in Amaterasu.
