Moltan lava cake
Ingredients
6 (1-ounce) squares bittersweet chocolate
2 (1-ounce) squares semisweet chocolate
10 tablespoons (1 1/4 stick) butter
1/2 cup all-purpose flour
1 1/2 cups confectioners' sugar
3 large eggs
3 egg yolks
1 teaspoon vanilla extract
2 tablespoons orange liqueur

Directions
Preheat oven to 425 degrees F.
Grease 6 (6-ounce) custard cups. Melt the chocolates and butter in the microwave, or in a double boiler. Add the flour and sugar to chocolate mixture. Stir in the eggs and yolks until smooth. Stir in the vanilla and orange liqueur. Divide the batter evenly among the custard cups. Place in the oven and bake for 14 minutes. The edges should be firm but the center will be runny. Run a knife around the edges to loosen and invert onto dessert plates.

Waindo's simple tomato sauce:


olive oil
4 cloves of finely chopped garlic,
1 chopped onion
1 bunch fresh basil, also finely sliced
1.5 kg of boiled, peeled and chopped tomatoes
sea salt, freshly ground black pepper
table spoon of sugar, one chilli pepper.
2 dl of white wine
0.5l water
10 grams butter


Procedure:

So; fry the onion on the olive oil till it becomes transparent (you can put some salt on the chopped onions to prevent it from burning since onion starts watering out when salted; when it becomes transparent add the tomatoes, chilli pepper, salt, ground black pepper, garlic and water.

After 20 mins add the wine, let it cook for another 10 so that the alc. from the wine evaporates. 1 minute before the end add a bit more of garlic and about 10 grams of butter; instantly afterwards finishing the sauce. Add chopped basil, serve it with thin spaghetti or macaroni pasta.

Bobotie A South African dish
*.1kilogram minced lamb(or beef)
*.½ onion(diced)
*.25ml cooking oil
*.10ml butter
*.25ml curry powder
*.10ml salt
*.25ml peach chutney(or apricot)
*.15ml apricot jam(smooth)
*.15ml Worcestershire sauce
*.5ml turmeric
*.25ml malt vinegar
*.1 handfulraisins
*.3 eggs
*.375ml milk
*.1 slicebread(crestless)
*.1 pinch ofsalt
*.bay leaves

Method
1.Put bread into bowl with milk and leave to soak. Heat oil and butter in large pan and fry onions. When onions are soft add curry powder, slat, chutney, Worcester sauce, jam, turmeric and vinegar. Mix well.
2.Drain bread, saving milk. Add bread, raisins and meat to pan. Cook over low heat until meat looses its pinkness. Remove from heat and add 1 well beaten egg. Mix well then spoon into greased ovenable dish and level the top
3.Beat remaining 2 eggs into the reserve milk, add turmeric and salt, mix well. Pour over meat mixture and place bay leaf on the top. Bake uncovered in 180C for approximately 1 hour or until set (nicely browned). Serve with yellow rice, banana, coconut & chutney.
Raisins are optional

Waindo's Chicken 'n' veggies; (2 ppl lunch)

1 big ass chicken
2 red paprikas
2 red onions
2 carrots
5 cloves of garlic
1kg of potatoes
1 branch of rosemary and one leaf of bayleaf
salt
pepper
juice from one tangerine
one whole tangerine
2dl of water
2dl of sunflower oil



Put the chicken in the dish you're gonna bake it in, pour all the oil over it, salt it intesively, pepper it too. Slice the paprika and the tangerine to halves and fill the chicken with that. Salt it and pepper it from the inside aswell.

Now throw that in the pre-heated owen to about 200 degrees C for about 45 mins; flip it few times. While it's roasting on it's own, slice the potatos, onions, rest of the paprika, carrots and garlic. Mix it all together and season it a bit on it's own. Put a bit of thyme in it aswell. And just a drop of oil. Mix it in with the chicken. Squeeze juice from one tangerine over it all; put in the rosemary and the bayleaf, the water and put tin-foil over it; so it can steam up while roasting. Roast it for around 40 more mins, shake and turn the potatos after 20 mins.

Serve with seasoned crystal salad.

Waindo's Chicken 'n' Shrooms Pasta;


Ingredients:

2 onions
5 cloves of garlic
2 red paprikas
15-20 dag of cherry tomatos
30 dag of shrooms of your choice
chicken breasts - white meat (like, about 3 for 3-4 persons)
3 tablespoons of dijon mustard
2 tablespoons of cooking cream
green tabasco (8-10 drops)
tablespoon of butter
penne pasta (500g)
salt, pepper, thyme
olive oil
half liter water
2dl white wine



Preparation:

Finely chop the onions the paprikas, the shrooms; put them aside, chop the garlic; put it aside; slice the cherry tomatos in half; put them aside.

Now; slice the chicken breasts in long slices (slice it diagonally), season it raw; (salt, pepper and mustard); now, heat up the frying pan, let it be screaming hot, pour in about 2 tablespoons of olive oil and fry the chicken untill it's golden-brown. Low the heat down, and put the chicken aside (out of the frying pan), wok is best for this btw.

On the same juicy grease that's left behind, stir fry the onion and paprika; when it becomes glassy, put in the garlic, the chicken and the water. when it starts to boil up; put in the shrooms, thyme and wine. As soon as the wine evaporates try it, season it more if needed, add the cooking cream and the cherry tomatoes; and cook it on low heat for like 2 minutes.

Mix in the cooked pasta, add a bit more thyme, the tabasco and the butter. Bon apetit! :)

sprinkle of salt
half teaspoon of rum
sprinkle of sugar
lemon zest.
2 teaspoons of oil


Preparation:


Stir and mix the eggs untill they become all foamy, add the oil, milk, rum and lemon zest and mix some more. Now continue constantly mixing, while adding the flour, when the mixture gets homogenized and thicker, pour in the sparkling water, maybe 1dcl, maybe 2, that's for you to decide. The CO2 from sparkling water tenderizes the mixture, and the pancakes should be heavenly soft when done.:p

Take out the proper frying pan, the oil and rock and roll. Use the filling of your choice and roll em up. xd

Waindo's Simplified Dalmatian Pasticada​




NOTE:This is a specialty dish of my region.
NOTE:fricandeu is a french term, it's a thigh muscle.
NOTE:I didn't cook this for a while since I'm re-examining the morality and healthiness of meat eating, I might turn pescetarian or vegetarian soon.



Ingredients

2 pounds of beef (fricandeau)
4-5 cloves
5 cloves of garlic,
15dag. bacon slices
2-3 onions, finely chopped
1 apple
celery root
2-3 carrots
8-9 prunes
1 cup of red table wine
1 tablespoon tomato paste
1 1/4 cup beef stock
1/4 cup lard or oil
salt and pepper
thyme
rosemary



Wash the fricandeu, wipe it with towel, spike it with bacon. Make more small slits in side of roast and insert garlic and clove in each slit. Season with salt and pepper, thyme and rosemaryand refrigerate overnight. The next day, heat oil and brown the meat on all sides. Add onions, celery, carrots and simmer slowly until meat soaks up all the juices. Add wine, tomato paste, prunes and grinded apple.Simmer about 30 minutes. Add beef stock and simmer slowly for 2 hours. If necessary, add a little water occasionally. Remove the meat from the sauce, slice thinly and place on serving platter. Blend up the gravy and cook it for another half hour. If required. Pour sauce over sliced roast before serving. Serve with pasta, gnocchi, cooked potatos, etc.

Gran's Chocolate-covered Milk Cake


Ingredients:

Batter

6 eggs
300 gr sugar
250 gr butter
300 gr flour
2 teaspoons baking powder
1/2 cup milk

Chocolate topping

2 cream packs
7 tablespoons chocolate powder
1/3 cup sugar
1 tablespoon butter

Steps:

1) pre-heat oven at 210º and grease pan with butter and flour
2) separate the yolks and whites of the eggs into different containers
3) beat the egg whites (IMPORTANT!) on the first container
4) add the sugar and butter to the second container and mix them well, then little by little add the flour and baking powder
5) join the two recipients together after you're finished mixing and beating and pour the batter on the pan, so you can finally place it inside the oven
6) wait around 35-40 minutes
7) don't let it overcook/undercook like me and keep checking it
8) once it's finished, remove it from the oven and let it cool for a while
9) pour a little milk on top of it to make it softer inside, it'll absorb it right away

Note: you could stop there and you'd have a milk cake. But if you're a chocolate lover like me, you will not regret adding this delicious topping.

10) place the cream, chocolate powder, sugar and butter into one pot and let it melt on the stove, medium heat, without ever stopping to stir it until it becomes thicker
11) cover the cake with it, but don't be clumsy like me and go overboard, and be more careful so you don't burn yourself, too!
