If CoO means Color of Observation (Observing) , then idk , for example , in skypiea , those guys had CoO and they were hit and none of the SH had haki ... so... well... idk x) , i go more for Fireplay's answer .
The only way to actually go around it is to basicly shut off your thinking like Luffy and throw random punches so to say but that would more then likely get you killed.
The thing with CoO is that aslong as you are faster then your enemy even if they can predict your movements if they are not fast enough to react you are bound to hit them
Only Enel had it back then , and Luffy was able to hit him by bouncing random hits on the wall while basically making himself go into dumb mode ( no thinking of his current and next moves whatsoever , just hitting randomly )
