If all attacks and techs for both players are in play then itachi. Byakuya shows no scans of defending against illusional power. And bleach characters are very weak against illusions.
This act was shown by aizen, and amat is direct eye contact so chances of byakuya defending is possible, but he won't be 100% afterwards anyway. As we all know amat never stops burning and can spread, and can cover a wide area, and can also be used as a defense shown by both sasuke,itachi. And itachi is highly skilled in many areas. And and have many techs.
Byakuya may have speed but itachi is not slow by a long shot, and byakuya's bankai will be his only chance at victory, but itachi has susan, which can deflect all his little peddles. And just like itachi byakuya can't last very long either.
