The reason she didn't face them in CQC is because there were too many and what's the need for it when you can solo all of them without having to exert effort.

She can't fight them in CQC. She tried that and Naruto had to save her and Cho cho

Even the others were shocked except Sasuke because his eyes allowed him to percieve what's going on. The shins have the same ability via Sharingan so that excuse is effectively silenced.

Bro, Sarada couldn't even use her hands back there, she had Naruto's lunch in her arms, and you can't have proper balance when you can't use your arms (this is physical science). I don't see, therefore, why this is used so often.

That's not really CQC plus shin is using the sharingan(he even uses it to counter Sarada's kunai) it was mostly a weapons battle.
Yes the shins also saw Sarada kill the mini jyubi thing read the chapter. The 4 shin + all the others facing them. So they knew. It's all pretty much on the same page.
The moment they'd seen her enter their area the ones closer we could argue the closest were caught of guard(even though sharingan over rides that but the ones further away should've dodged but didn't.
It's clear sharingan with CES is too much for even them. So somebody like Boruto wouldn't be very much.
