it was because of the graduation ritual. You were pitied against the rest of your class and the goal was you had to kill the rest of your class to graduate to become a ninja... geez talk about a low acceptance rate

well it was kind of like the chuunin exams. you had to fight to advance. but they had to fight to the death instead of a just fighting match to a knock out or whatever you want to call it. they stopped the test tho because zabuza killed an entire class of young shinobi. so the "blood" part came from their graduation standards

I SORT OF AGREE
it did end but not because of zabuza sure he wasnt even a shinobi student and wandered intio the exam ground and slaughtered all those young trained shinobi
but the exam did not end due to this it end because of the new kages rule,
the old kage found this a way to train emotional perfect worriors buy killing all emotion in one student and having the rest perish.
however creul this is i can see the point for a S rank missing nin to have no mercy
nor the use of emotion in that situation this is the way all 7 swords men of the mist where trained.hence the title *blood mist village*
good idea although didnt entirely woork as seen with zabuza and haku or kisame and itachi both partys formed an attachment.
side note:
this training was also used by danzo in train root members such as Sai to purge all emotion but look what happened there worked for a while and look now.

Wrong

They had you fight 1 person to the death that was in your class, it's just that Zabuza decided to kill everyone. Thus him getting his name, the demon of the hidden mist.

Also it was called this because of all the blood that was spilled under the rule of the 4th mizukage (controlled by madara). There was many assassinations for power, Kisame is a great example. He killed his own friends to save information.

He was a genin, and killed the rest of his class mates. That's why it ended.
